Initially produced only one beer, which we know today as Chimay Red, but later appeared Chimay Blue, and the last to complete the range was the Chimay Triple.
Throughout its history the monastery brewery of Chimay and his monks have been pointers as far as technology is concerned, they have always gone ahead and their inventions or improvements have served to other factories or industries.
In the 50 Dom Theodore, monk-beer, a cell isolated microscopic basis of yeast, which serves until today as the basis for regeneration. This discovery is unique Chimay beers and is saved as its most important treasure.

Observations The Chimay Blue is a dark beer that was born in the town of the same name in Belgium near the French border, where Trappist monks built a Cistercian abbey in 1850. In 1862, the monks produced their first beer respecting all ancestral traditions for making these wines are followed, developing natural, high fermentation, followed by a second fermentation in the bottle.
